Maggi is an emotion, an unsaid love that has happened to everyone. It's a savior in times of hunger and a show stopper in Netflix and chill. Maggi brings nostalgia and lot of stories with it. We all remember late night maggi munching, tiffin wali school maggi, evening maggi with cold drink after a playful day in the park, birthday party wali maggi, cousins get to gather wali maggi and the endless list. A simple pack of noodles and masala but an unending trail of recipes and possible ways to cook Maggi.
Be it any brand of instant noodles we address them as Maggi only. Let us make instant noodles in the most interesting way.
This is a complete Indian version of Maggi for the people who love desi flavor above everything.
Chopped vegetables( onions, capsicum, carrot, cabbage, peas, tomato)
Chopped green chilies- spicy is desi
Maggi !! obviously
Chopped coriander- any desi dish is incomplete without it
Butter- for that extra flavor
Take a Kadai (iron Kadai preferred) and heat the butter/mustard oil ( tastes better in oil).
Put cumin seeds and chilies and roast them.
Add chopped onions and stir fry until golden brown.
Add chopped tomatoes and roast them until they change color.
Add peas, cabbage, carrot, and stir fry the veggies.
Add salt, turmeric, coriander powder, and red chili powder mix well, and stir fry.
Add water (enough to submerge the veggies and noodles).
Bring to boil and add Maggi masala and empty the noodle break only in two parts.
Let the noodles dissolve and stir occasionally using a fork.
Add chopped capsicum once the Maggi is almost cooked.
Turn off the gas and cover it with a lid or plate and leave for a while. (Maggi cooks better in steam and less water)
Open the lid garnish with coriander and serve hot.
Caution- adding too much water can result in over boiling the noodles. To cook them Al-Dante add very less water in the beginning, you can always add more later.
White Sauce Baked Maggi in Glass
Who said beer glasses are just for beer? Well, this one is for all the Maggi addicts!!
For the white sauce-
Take a pan, add butter and let it melt.
Add one spoon of refined flour and roast it until brown.
Pour milk and stir continuously on a low sim to dissolve lumps.
Add salt and pepper mix well.
Add sauce of your choice and mix well.
Now cook plain Maggi the usual way and keep it aside.
Cut the bell pepper and capsicum into small cubes and grill them. (optional)
Mix the grilled veggies in white sauce.
Take a beer mug or glass that is microwave/oven safe.
Pour one layer of white sauce mix and then on the layer of cooked Maggi.
Repeat the process till the glass is filled and leave 1 or 2inch on the edge.
Grate cheese on the top and place it in the oven/microwave for 50-60 secs.
Take it out using gloves/cloth and sprinkle seasonings.
Pierce in the fork and serve.

Green chilies chopped
Cook Maggi in the usual style.
Take a sauté pan and add butter.
Add chilies and onion.
Cook till they turn translucent.
Take two bowls and fill in the Maggi.
Add grated cheese and chili flakes to one.
And garnish the other with caramelized onion and chili.
squeeze some lemon (optional).
SAUCY GARLIC YEPPIE
This one is especially for all those who love tomato sauce with a hint of garlic.
Take a pan and add water, and bring to a boil.
Add corn, peas, chili, onions, and garlic.
Add saucy yeppie masala and noodle cake without breaking it.
Let it soften.
Stir it with a fork and loosen the strands.
Turn off the gas once yeppie is cooked at 90%.
Close the lid and let it cook in the steam.
Remove the lid and serve.
